I had one of these menus in November 1999, and the other in January 2006. For one of them I paid the premium for the reserve wines. Other than that, I'd like to let them speak for themselves. I am very interested in your comments

tough to comment; the last menu is barely legible. why anyone would order a tasting menu with 12 desserts, though, is beyond me. A LA CARTE.
It looks like they're spending approximately half the amount on the ingredients of the second menu as the ones in the first. Chanterelles, duck and venison are replaced by pumpkin, beets, and oxtail. Come to that, they're probably worth about a third of the former, if that.
